Probably the most difficult meal to keep gluten-free is breakfast--with all the gluten-packed options out there (eggs and toast, pancakes, waffles, muffins, to name a few), it can be hard to know where to start.

Until now!

The Domestic Geek is at it again and has captured our taste buds with her latest breakfast ideas: here is her Almond Breakfast Bites, Potato Rosti, and Tomato Spinach Frittata gluten-free breakfast ideas.

For the Almond Breakfast Bites, you'll need almonds, sunflower seeds, raisins, cranberries, almond butter, and honey.

Simply combine almonds and sunflower seeds in a food processor until they are nice and crumbled, then heat the almond butter and honey together in the microwave. Combine all the ingredients in a medium mixing bowl and scoop the mixture into a lined muffin tin. Stick it in the freezer for 20-30 minutes and you're good to go!

For the Potato Rosti, you'll need a sweet potato, some yellow potatoes, olive oil, garlic powder, salt and pepper, sour cream, and chives for garnish. For the Tomato Spinach Frittata, you'll simply need some eggs, milk (optional), garlic powder, salt and pepper, spinach, cherry tomatoes, and crumbled goat cheese.
